Char House was born from a desire to create something timeless — a dining experience where fire, flavour, and craftsmanship come together.


Founded by renowned Toowoomba restaurateur Penny Hely, the mind behind the much-loved Loulaki, Char House represents the next evolution of her culinary vision. With a career defined by quality, creativity, and connection, Penny set out to build a space that honours the artistry of cooking over flame — where the theatre of dining is as captivating as the dishes themselves.


Every element of Char House has been considered with intention: from the char-kissed cuts of Australian beef and the delicate balance of French-inspired sauces, to the curated selection of wines and whiskies that complete each course. Behind the open kitchen, Head Chef Beau Browne leads a team devoted to precision, passion, and respect for every ingredient.

Known for her instinctive approach to dining and her ability to build experiences that people remember, Penny first made her mark with Toowoomba’s beloved Loulaki.
At Char House, she channels that same heart and precision into a new concept — one that celebrates bold flavour, refined technique, and the simple joy of gathering around a table.

Working alongside Penny is Head Chef Beau Browne, whose career spans some of Melbourne and London’s most respected kitchens.
Beau’s philosophy is rooted in craftsmanship — combining classical methods with local produce and a fire-driven edge. Together, Penny and Beau have curated a menu that’s refined yet honest, inspired by tradition but built for now — with a distinctive French twist.
